Have you spotted a hot air balloon in the air with your child this summer?  Why not make one for lunch today?

Hot air balloon:  The basket is a graham cracker, ropes are string cheese thinly cut, balloon circle is made from a banana cut in half lengthwise and made to look like a circle, interior is strawberries and celery.  The clouds are cottage cheese and the people are carrots with raisins cut into fourths! 

This snack really allows the fruits and veggies to be the star!

Today I’ll be showing you a simple puppy lunch, and then a variety of other great snacks to make using a high protein, high fiber tortilla wrap.  I’ve recently discovered these babies and have really enjoyed using them with my girls to make creative lunches.  I’ve also enjoyed knowing that the girls are getting significantly more protein and fiber from the wraps than they would from two slices of traditional bread.

We have had record pollen counts here in Atlanta, GA with 8,164 particles of pollen per cubic meter of air!! So since it's officially summertime I figured a watermelon flavored sweet was definitely needed! I've been on a search for watermelon flavored jell-o for ages and can never ever find it in stores.  When I saw both watermelon and melon flavored jell-o recently in my local food store I knew it was a sign.

Although I would have rather tried making the pudding from real watermelon, my past experience with cooking this fruit made me realize that its flavor is usually best fresh so all the watermelony flavor comes though.  (Here is a recipe for watermelon pudding from real watermelon in case you are interested!)  But since this pudding is essentially from a box, it's also really simple to put together.

And with summer has come the rainbow of delicious fresh fruit that’s now in season.  Those beautiful colors have a way of making my day, and I somehow always return home from the market with more fruit than I (ahem) was planning to buy.

But beautiful fruit is meant to be celebrated, especially at breakfast!  So for a fun brunch idea this summer, why not have a Mini Rainbow Pancake Brunch?  It is so simple!  Just make a batch of mini pancakes, top them with some yogurt and chopped fruit, and then drizzle with maple syrup.  So easy, so tasty, and your friends and family will have a great time mixing and matching their own colorful creations.

I love when food can be beautiful, fun, and delicious! Such is the case with our fruit bouquet!   We skewered the fruit to add to our collection of kebobs and then were torn between wanting to stare at our creations, or eat it up! The boys chose eat it up almost immediately.

If our kids always ate fruit for dessert, they would be so much healthier!  Fruit, with its natural sweetness, low calories, and being full of nutrients, are just the desserts they need.  And if you serve fruit for dessert often enough, in lieu of sugar laden processed desserts, the fruit will be soon be plenty sweet for them.

Now we did use a tiny bit of chocolate, but even that contains some beneficial antioxidants.  So what are you waiting for? Your kids want some dessert tonight!

Before you tell me I’m mad in the head, which by the way you would be right, I will say it before you can,“This is not a recipe, but merely a presentation idea”.

That being said, I set out to get crafty and re-fashion a picnic standard, the fruit salad, into something fun and stylie (real word if you play scrabble with me). Determined to dump the de rigueur watermelon bowl, I needed something simple and picnic friendly.

We thought it would be fun to make Ernie and Bert out of  fruit. We used 1 clementine, 1 banana, raisins, 2 mini marshmallows, and 1 red fruit roll up.

This is what we used to make 2 of these. Peel the clementine and save the peel. Separate it in half and put them on each plate. Peel the banana and cut in half. Place those on the plates.
