Have you spotted a hot air balloon in the air with your child this summer?  Why not make one for lunch today?

Hot air balloon:  The basket is a graham cracker, ropes are string cheese thinly cut, balloon circle is made from a banana cut in half lengthwise and made to look like a circle, interior is strawberries and celery.  The clouds are cottage cheese and the people are carrots with raisins cut into fourths! 

This snack really allows the fruits and veggies to be the star!

One of the great joys I have in life is celebrating with friends. Beyond the typical birthdays and holidays, I make it a point to find and/or create as many reasons to cook, chat and laugh together as possible. Luckily, with friends like mine, that’s not too hard. The reason behind this particular occasion? The continuation of our three part Star Wars marathon. Three movies (the classics), three hosting teams, three batches of awesome thematic food.

The first two hosts raised the bar high with colored white chocolate dipped pretzel rod lightsabers and Princess Leia cupcakes, so I had to think of something good. It didn't take too long, though, as the third Star Wars film stars some of my favorite fictional creatures, the Ewoks. Since I’d already had it in mind to make sushi, the answer was clear – Sushiwoks

Sometimes as parents we have to get a little creative in order to get our kids to eat the nutritious foods we would like them to.

This post was inspired by 2 things.  First, the fact that I picked 11 green bell peppers from my garden in one day.   Yes, the pepper explosion called for some serious creativity.  And second, the fact that neither of my children like or will eat bell peppers.

I think the word pepper freaks kids out.  It makes them think of something spicy.  But the truth is that bell peppers are anything but spicy.  They are crunchy, sweet, and have great flavor.  I truly believe that kids eat with their eyes and the packaging you present foods to your children has a HUGE impact on if they will eat it or not.

My kids just love fun sandwiches. Although some days it seems that Mother Nature can’t make up her mind, spring is inevitably on its way. I am so ready for the snow to melt away and for sunshine, rainy day showers, and new life to start blooming. I whipped up this really easy fruit and veggie snack for the kids this weekend to help welcome spring. I think it turned out pretty cute, if I do say so myself. It didn’t require any special tools (except a sharp kitchen knife) and it’s loaded with healthy vitamins and nutrients.
