Today I’ll be showing you a simple puppy lunch, and then a variety of other great snacks to make using a high protein, high fiber tortilla wrap.  I’ve recently discovered these babies and have really enjoyed using them with my girls to make creative lunches.  I’ve also enjoyed knowing that the girls are getting significantly more protein and fiber from the wraps than they would from two slices of traditional bread.

My boys loved our Ice Cream for Breakfast that we made awhile back so we thought it would be fun to make a grilled cheese sandwich and bananas look like ice cream for lunch! You could also cut a cone shaped waffle to make this for breakfast as well! We used 2 pieces of wheat bread, cheese, butter, 1 banana, and 1 strawberry.

I love spring! I love seeing the birds come back and I love the blossoming trees. Up here we have flowering crab apple trees, and they are absolutely gorgeous. They have beautiful pink blossoms and they smell amazing! Those trees were my inspiration for this cute lunch. I also incorporated a new veggie into this lunch—candy beets. They are so pretty when you cut them, and made beautiful little blossoms for my tree. My kids can be a little picky when it comes to vegetables, and I only have a handful that I can count on them eating every time. I was pleasantly surprised when they actually ate these candy beets, (well, most of them anyway). I think cutting it into a flower shape certainly didn’t hurt. This Rudolph the Red-Nosed Reindeer quesadilla was so easy to make! Can you guess what I used to make it? A large gingerbread man cookie cutter! You just turn that gingerbread man upside down and it makes a perfect reindeer. The legs become the antlers and the arms become the ears—so easy and so fun!
